彭娟，女，讲师。研究方向为食品安全快速检测技术和产品的开发。江西省赣江青年学者（2019年-2024年），以第一作者在NanoResearch，RSCAdvances，FoodAnalytical Methods，AnalyticalMethods，Foodand Agricultural Immunology等国际SCI期刊发表论文8篇，影响因子累计大于20，申请中文专利4项，英文专利1项。
